How To Make Mediterranean Chicken Meatballs
1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
2. Mix Ingredients: In a large mixing bowl, combine the ground chicken, breadcrumbs, parsley, red onion, garlic, beaten egg, salt, and pepper. Use your hands or a spoon to mix everything together until well combined.
3. Form Meatballs: Take about 1-2 tablespoons of the mixture at a time and roll it into meatballs, roughly 1 inch in diameter. Place each meatball onto the prepared baking sheet, spacing them evenly apart.
4. Bake: Once all the meatballs are formed and on the baking sheet, place them in the preheated oven. Bake for 18-20 minutes, or until the meatballs are cooked through and golden brown on the outside. You can gently shake the baking sheet halfway through baking to ensure even cooking.
5. Serve: Remove the meatballs from the oven and let them cool slightly before serving. Optionally, garnish with additional chopped parsley or a drizzle of olive oil.
6. Enjoy: Serve the Mediterranean chicken meatballs warm as an appetizer with tzatziki sauce, or as a main course with you favorite sides.
